Atkins Diet: Low Carb Snacks

I have been talking or demonstrating a number of low carb snacks in recent recipe videos, but I wanted to provide an education video on what other snack items can be had on a low carb diet.  I only touched about the Iceberg, and really the list is only limited by imagination and personal taste.  I did frame my video with two thoughts in mind:

  1. The snack had to be easy or fast to make — otherwise a snack could just be mini-meal and require as elaborate preparation.  At that point, everything you make could be a snack.
  2. The second limitation I placed on the list was eliminating most convenience or ready to make snacks, aka diet snacks.  I did this for two reasons — one the availability of such snacks is often limited by access or one’s local market.  The second reason is I generally distrust “diet” foods or foods specifically made to reach a niche market.  Even if well-made with acceptable ingredients, they often get discontinued right away, and any crutch they might have served was yanked away.  Another is perhaps trouble with relying about their nutritional information.  One company was highlighted recently with problems over the carb counts of those same Flax Z Snax ( -or- )

Here were my ideas for snacks. (the Induction Friendly ideas)
* Hard boiled eggs or Deviled eggs
* Cheese slices
* Beef sticks – find one without corn syrup
* Sugar Free Gelatin
* Pepperoni “chips” — Zap the slices in the microwave
* Lettuce Roll-ups — Roll luncheon meat, egg salad, tuna or other filling and veggies in lettuce leaves
* Lunch Meat Roll-ups — Roll cheese or veggies in lunch meat (read the labels for carbs on the lunch meat)
* Raw veggies and ranch or sour cream
* Pork rinds, with or without dip
* Parmesan Crisps — (Recipe video –…
* Fried Mozzarela pizza
* Flax crackers or cookies
* Flax Bread
* Buffalo Chicken Dip
* Bacon Wrapped Jalapeno Poppers (Recipe video –…

OWL Ideas: (Latter phases of the Diet – many of the old options are possible as well, such as fruit)
* Nuts (preportion if necessary)
* Sunflower seeds or other seeds like Pumpkin
* Low Carb Granola
* Whey Protein Shakes – check out About Time video
* Greek or Sugar Free Yogurt
* Strawberries and Cream Cheese
