Atkins Diet Recipes: Low Carb Bacon Wrapper Jalapeno Poppers

In a new partnership with FaveDiets (http://www.FaveDiets.com) recipe site, I wanted to respond to all the requests for snack menu items in my survey responses. This Induction Friendly recipe is more geared to planned snack times, say a football game, than adhoc, “need a snack now” time. They do however keep really well in the fridge for at least a few days. They never at least lasted longer in my fridge.  You can grill these for 10-15 minutes on medium-high heat or cook in the oven similar to the video.  Either way works well.

For those worried about the spiciness of the peppers, ensure you remove all the seeds and membranes of the peppers, and rinse them after slicing in half. My wife and daughters, who are not a fan of spicy peppers, loves this snack.  One other caution for those with sensitive or nicked hands, you might wear gloves while working with peppers.  The pepper oil and capascium can burn if not deadened to it.
