My Thanksgiving Menu for my family

Most years I (or my wife and I) are responsible for preparing the Thanksgiving feast for my inlaws (parents and brother and sister-in-law) .  It ends up being about 13 people ranging from toddlers to my wife’s parents.   The only real low carber is myself, but being cook, I get the privilege of setting the menu.  I try to be accommodating to their tastes as much as possible, but hey I have to eat too.  This year was a bit non-traditional as everyone was turkey’ed out, so my thought was to do more barbecue than normal.

Low Carb Items this year:

  • 7-Layer Salad
  • Bacon Jalapeno Poppers
  • Fauxtatoes
  • Slow cooked Pork roast from the grill
  • Fresh Veggies and Ranch
  • Low Carb Cranberry Sauce – which was rich (fresh cranberries, 1 cup of water, 24 drops of Splenda, and little Xanthan gum)
  • Fruit Pizza

High carb items to complement:

  • Taco dip / chips (my wife’s signature dip)
  • Rolls
  • Chocolate almond bark covered items
  • Pumpkin pie from my MIL

      The roast pork could have been a bit better (it needed another couple hours on the grill to be excellent), but the fruit pizza was probably my best one yet. Everyone loved it – LC’ers or not.

      I did make one adjustment to the original recipe. I left out the pineapple juice and and up’ed the lemon juice amount instead. I know there is other non-Induction friendly, but buying a 6-pack of pineapple juice that I would eat any other way seemed wasteful. My wife liked it just as well too.
