Atkins Diet Recipes: Red Pepper Soup (IF)

In partnership with FaveDiets ( http://www.FaveDiets.com ) recipe site, I want to thank Jennifer Eloff  (http://low-carb-news.blogspot.com/) for another awesome recipe especially on blustery winter afternoon.   A bunch of the new Atkineers on Facebook were asking for a soup recipe or a recipe to eat while nauseous, and this recipe immediately came to mind.  I hope you guys enjoy this soup as much as I do.  I have topping it with a dusting of Parmesan Cheese is great too.

If you are looking for thicker, richer soup, return some of the pulp from the strainer or eliminate the strainer step.  As prepared, the soup is very delicate and easy on the palate.  If you want something more satisfying, the pulp will certainly help that.

Ingredients:
4 Red Peppers, Chopped
2 TBS Olive Oil
2 TBS Chopped Onions
1 Clove Garlic, Minced
24 oz Chicken Broth
1/2 cup Cream
Dash Black Pepper
Makes 4 servings
