Atkins Diet Recipes: Low Carb Chicken Pot Pie

When I was growing up around age 6 or 7, I burned my leg pretty bad on a chicken pot pie as it flipped over on to it.  It was at least second degree burn, and I honestly didn’t have chicken pot pie or any pot pie for 15+ years after that.  It was one of those events that you develop subconscious aversions  to them.

Ingredients:
– Crumble Topping –

1 1/2 cup Carbquik             1/2 tsp Black Pepper
1/4 tsp Cayenne Pepper   4 TBS Butter, unsalted
1/3 cup Parmesan Cheese, Grated
1/2 cup Heavy Cream
-Filling-
2 pounds Chicken Breast (Boneless & Skinless)
3 cups Low Sodium Chicken Broth
1 Medium Onion                     3 Celery Stalks
1/4 cup Carrots (optional) Salt / Pepper to taste
1/2 cup Cauliflower              1 tsp Tomato Paste
4 TBS Butter                             1/4 cup Carbquik
1/4 cup Heavy Cream          1/4 cup Water
1 tsp Lemon Juice
Makes 8 Servings.
