Cake on a low carb diet – have your cake and eat it too

I was asked a couple of weeks ago to post a recipe on how to have a birthday cake while doing Atkins Diet. I tried multiple recipes for both the cake and frosting, and came to one I like. This cake features the coconut and almond flour I ground a few videos ago.  The recipe for the buttercream frosting will be posted to Youtube shortly as well.

  • Thank you so much! My son’s birthday is at the end of the month, and he was devastated that I wouldn’t be eating any of his birthday cake. Now not only will the cake be something I can eat, but it will be healthier for him too.

      My wife is the source for our kitchen’s color, so I can only think that great minds think alike. At some point, I would really love to have a more professional kitchen — at least stove and fridge. 🙂
