Not only your cake, but low carb Butter Cream Frosting recipe too…

When asked for a cake recipe for someone’s birthday, I knew I had to do a recipe for frosting shortly thereafter.  You simply can’t have a plain birthday cake without frosting, can you?  This recipe is a bit more involved than the Cinnabon icing recipe, which was my first attempt at frosting, but I like this one better for this application.  The only thing missing is a little food coloring, and you are ready to start decorating your cake.
Here’s the original recipe from Linda’s Low Carb:


  • 1/2 cup Heavy Cream
  • 1/2 cup Butter
  • 1 cup equivalent of Liquid Splenda, or powdered granulated Splenda
  • 1 tsp Vanilla extract
  • 1/2 tsp Xanthan gum
  • 1 oz of Cream Cheese

Serves 10 slices

Nutrition Facts per Serving:
129 Calories, 14,2g Fat, .4g Total Carbs (0g Fiber) , .6g Protein

    Kent Thank you so much for both these recipes. The coconut is a touch of genius.

    Pound cake is a mystery to me here in the UK, so I tweaked your recipe. I added some ground flaxseed to the cake mix and left out the lemon juice. For the topping I used more cream cheese and added juice of a lemon and 2 mandarin oranges, with less stevia than recommended. (I think Americans have a sweeter tooth than the Brits, judging by the recipes.)

    I’ve just made it and had my first slice. Delicious.

      I am glad you liked it… This past week has been rather crazy with work. I didn’t have much chance to do anything in the kitchen except for yesterday.
