  • 1 cup Natural Peanut Butter
  • 3 tbsp Splenda (Stevia, Truvia)
  • 1 tsp vanilla
  • 1 egg
  • ½ tsp baking soda
  • 1 /2 cup almond flour
  1. In your mixing bowl, combine all ingredients together
  2. Take a tablespoon, and portion out a one inch ball of cookie dough onto a parchment paper lined cookie sheet.

I wanted to make an extremely portable dessert for those following the diet.  Some of my desserts are more sit down type ecipes, but what about for those people on the go.  This one was to be portable for them to eat say in the car or while shopping.   If you exchange the almond flour for whey protein powder, these cookies could almost classify as one of those breakfast cookies — nutritious enough to be a meal.
