Giving low carb side dishes some love — “Awesome Broccoli Casserole” recipe

Atkins Diet Recipes: Awesome Broccoli Casserole (IF)

I can get accused of focusing too much on the big items of one’s meals, i.e. entrees or the main dish.  While that is good, it does somewhat leave the times in which you are having a grilled ribeye in a quandary for what to have with it.  I wanted to make a side dish that anybody would love.    One suggestion is you could include bacon or ham (the smoked shanks I have in my fridge would have worked out great), but I also like giving my vegetarian Atkins followers options too.

Low Carb Side Dish - perfect for potlucks or dinners at home
  • 1 cup Mayo
  • 4 oz Cream Cheese
  • ¼ cup Heavy Cream
  • ½ small onion, chopped
  • 1 egg, beaten
  • 2 Bunches Broccoli
  • 8 oz Cheddar Cheese, shredded
  • ¼ tsp of Paprika
  • Salt/Pepper to taste
  1. Preheat oven to 350F.
  2. Combine Mayo, cream cheese, heavy cream, onion, and egg into one bowl. Mix together.
  3. Add chopped broccoli florets into second bowl with shredded cheese.
  4. Add mayo mixture, salt, black pepper, and paprika to the broccoli and cheese. Mix well together.
  5. Bake for 40 minutes until cheese is brown on top.
