Great low carb snack – Popcorn Cauliflower

Atkins Diet Recipes: Low Carb Popcorn Cauliflower (IF)

I wanted to continue my series of side dishes and snacks by making this long time favorite.  It may not exactly look like popcorn, but it has that same salty snack taste and feel of it.  The browning of the cauliflower (carmelization) really adds to the flavor and sweetness of it.  You can burn it, but it takes a long time before it becomes unpalatable.

Low Carb Popcorn Cauliflower

Great low carb snack or side dish
Ingredients
  • 1½ heads cauliflower (6 cups)
  • ¼ cup oil (coconut oil preferred)
  • 1 tbsp salt
  • 1 tsp salt free seasoning, optional
Instructions
  1. Preheat over to 425F
  2. Line a sheet pan with parchment paper.
  3. Chop the cauliflower down to the florets. Remove the stems and cores.
  4. In a medium bowl, pour oil, salt, and salt-free seasoning. Stir until well combined. Add the cauliflower and ensure its coated with oil.
  5. Spread cauliflower out on sheet pan.
  6. Place in oven for 60 minutes. Flip or rotate cauliflower every 20 minutes until the cauliflower is golden brown. They can be slightly blackened, but do not burn too many.

  • Hey, I just waned to say , this is one of my favorite recent recipes. There are so many cauliflowers recipes that I found that add too many other ingredients on top. You do a great job of keeping the taste of cauliflower simple, but with a nice healthy twist. I love eating this at night. It totally crushes my hunger too. Just posted it on my site. Thanks.

      Thanks Eddie, and great blog to read too. I browsed over there, and I always love review sites that tell it like it is. Honestly there is so much good with roasted cauliflower that simple kosher salt and cracked pepper is enough. It does take a bit of time to prepare at a hour in the oven, but it is worth it.
