Atkins Diet Recipes: Low Carb Bedeviled Eggs
Recipe Type: Snack
Prep Time:
Total Time:
Serves: 10
Not your mother's deviled eggs!
  • 10 eggs, hard-boiled
  • 4 slices bacon
  • ½ cup mayonnaise
  • 1 oz Cheddar cheese, shredded
  • 1 tsp hot sauce
  • Dash cayenne pepper
  1. Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water
  2. Place bacon in a skillet. Cook over medium-high heat until evenly brown. Crumble and set aside.
  3. Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon, hot sauce, cayenne pepper, and cheese. Stir in mustard.
  4. Fill egg white halves with the yolk mixture and refrigerate until serving.

I wanted to make a favorite snack especially appropriate around Halloween.  It is my favorite low carb style Bedeviled Eggs.  These are not your mother’s deviled eggs, but enhanced low carb style with Chipotle hot sauce, spices, and bacon.  They really give these a kick and set them above and beyond standard deviled eggs.  I am sure you will love them!

PS – I hope you guys enjoy the video as well as the recipe.  The makeup is my daughter Brooke’s handiwork.  She did a fantastic job!
