Atkins Diet Recipes: Low Carb Honey Mustard Chicken

I once again got to work out my frustration on some helpless chicken by using the paillard cooking method. It made for a really tender and quick recipe. Not finishing the chicken on the stove kept most of the juices in the chicken, and the honey mustard sauce really completed the dish. With the apple cider vinegar in the sauce, it had just the right amount of twang as well.

Great, easy weekday dinner that you would can work out your frustrations as well
  • 4 large chicken breasts
  • ¾ cup LC honey mustard sauce (check out

  • 2 tbsp coconut oil
  • Dash Paprika
  • 2 oz cheese
  1. Preheat oven to 350°F .
  2. Slice chicken breasts in half. Place each half of chicken in a plastic bag. Pound each half to ¼ to ⅓-inch (0.6 to 0.8 cm) even thickness.
  3. In large skillet, heat 2 tbsp of oil. Sauté each side of the chicken 3 minutes on medium-high heat. Place chicken in 9 x 13-inch (2 L) glass baking dish. On top of the chicken, sprinkle paprika, drizzle 2-3 tbsp of sauce, and add cheese.
  4. Bake 20 minutes until the cheese on top is browned. Broil final minute if needed.

    I’m curious why you use blackstrap molasses instead of honey in the honey mustard sauce as well as other recipes. When I compare the two, they seem fairly comparable in terms of calories and carbs. I notice that molasses has more minerals but can’t really find any other advantages. I would love your input.

    You are right the carbs for honey and molasses are largely the same. (5.7g vs. 5g net carb) The reason I used molasses other than honey is how much more potent flavor wise molasses is than honey. Blackstrap molasses has been boiled down 3x times, so its ability to impart flavor is pretty high. A comparable tsp of honey would not be as detectable in that amount of Mayo.
