Atkins Diet Recipes: Low Carb Denver Muffins (IF*)

Atkins Diet Recipes: Low Carb Denver Muffins (IF*)

I wanted to make another recipe similar to the previous tuna balls recipe that prove low carbing does not necessarily need to be expensive. Doing low carb shouldn’t require your grocery bills go up exorbitantly.  This is a great breakfast idea to make on Sunday night to ensure you have an easy breakfast all week long.  My only problem will be keeping my kids away from them.

Thanks for a great easy recipe. I modified it for what I had on hand and cooked it in a 9×13 pan because I’m too lazy to mess with muffin tins :) I will make it again for sure. Thanks!

I can appreciate the not wanting to deal with the mess of muffin tins. I liked the portioning aspect as I can over-indulge at times with things in a pan. I am glad you liked the recipe, and the modification mention will certainly help others as well.
