Low Carb Magic Peanut Butter Pudding (OWL)
I have always been a fan of peanut butter — whether it be peanut butter fudge, peanut butter ice cream, or simply a tablespoon straight. This is extremely quick and simple snack idea for those at Phase 2 or Ongoing Weight Loss phase. Using the Ninja makes it even simpler and quick to make. Whether this is an Extended Induction or OWL food depends on your interpretation of the DANDR. In some sections, Dr. Atkins references peanuts under the nuts section, but most people realize peanuts are legumes not nuts. I have marked it as OWL to prevent some of the conversations, but personally, I always considered them a nut.
Quick, easy low carb dessert
Ingredients
- 2 tbsp peanut butter
- 1 tbsp heavy cream
- 2 tsp Splenda, or liquid equivalent
- 1 tbsp raw coconut, unsweetened
Instructions
- Add all ingredients to Ninja Blender, and mix for 30-60 seconds.
