I have seen the resurgence of new Atkins followers since the start of the year. I wanted to upload a super simple recipe that all low carbers can follow. Cabbage is one of those “Other Vegetables,” and has loads of good minerals in it. Atkins Diet Recipes: Low Carb Coleslaw (IF)

Atkins Diet Recipes: Low Carb Coleslaw (IF)

Ingredients

  • Ingredients:
  • 2/3 cup mayonnaise
  • 1/2 cup Splenda (or liquid equivalent)
  • 2 tbsp dried onion
  • 2 tbsp white vinegar
  • 1 tsp celery seeds
  • 1/2 tsp black pepper
  • 1/8 tsp salt
  • 14 oz bag coleslaw mix

Instructions

  1. In a medium bowl, add mayonnaise, sucralose, dried onion, vinegar, celery seeds, black pepper, and salt. Stir together.
  2. In a large bowl, add cabbage mix, and pour mayonnaise mixture over top the cabbage mix. Stir well.
  3. Chill for 1 hour.
