One of my more popular videos on Youtube is my Induction-friendly flax bread recipe. People on the Atkins Diet facebook site call a similar recipe Muffin in a Minute. Theirs has a bit more flax meal than mine does, but it is essentially the same recipe. The creative people on that site have taken the standard recipe and enhanced and made it better. This recipe is essentially a cross between a mock danish, pumpkin pie bake, and the flax bread to make a good snack. I highly recommend this especially for those still on Induction.
Pumpkin also represents one of those foods that people often think they have to give up on a low carb diet, and that could not be further from the truth. It is a great winter time squash that can provide warmth and hardiness to many foods. I will be including it into a number of my dishes this winter to help people explore what is possible with this “Other Vegetable.”

- 1 oz cream cheese
- ¼ cup flax meal
- ¼ cup pumpkin
- 1 egg
- ½ tsp Cinnamon
- 2 tsp Splenda
- ½ tsp baking powder (optional)
- Nutrition Information per serving
- 175 Calories, 13.5g Fat, 8g Total Carbs (4.5g Fiber), 7g Protein
- Soften cream cheese in microwave. (10-15 seconds)
- Add remaining ingredients to bowl, and mix well.
- Microwave for 2.5 to 3 minutes until the center is cooked.
- Serve warm.
