Induction Friendly Snack – Pumpkin Muffin-in-a-Minute (IF)

Atkins Diet Recipes: Low Carb Pumpkin Muffin-in-Minute (IF)

One of  my more popular videos on Youtube is my Induction-friendly flax bread recipe.  People on the Atkins Diet facebook site call a similar recipe Muffin in a Minute.  Theirs has a bit more flax meal than mine does, but it is essentially the same recipe.   The creative people on that site have taken the standard recipe and enhanced and made it better.   This recipe is essentially a cross between a mock danish, pumpkin pie bake, and the flax bread to make a good snack.  I highly recommend this especially for those still on Induction.

Pumpkin also represents one of those foods that people often think they have to give up on a low carb diet, and that could not be further from the truth.  It is a great  winter time squash that can provide warmth and hardiness to many foods.  I will be including it into a number of my dishes this winter to help people explore what is possible with this “Other Vegetable.”

This video also celebrates the fact my new book, Low Carbing Among Friends, shipped yesterday.  I am running a contest for the first person to take a photo of the book with themselves I will dedicate a recipe video to them.  Post your photos on the Facebook site for my videos or the book’s Facebook page.

Just curious…trying to incorporate hulled hemp seeds into my diet. Could I lightly grind hemp seeds and use instead of the flax?
Thanks! BTW love the cookbook! I ordered one through Jennifer Eloff’s sight as soon as I saw it! Already made your sausage “quiche” and really loved it!

I have never personally used hemp, so I don’t know how it acts when cooking. (I know some people who have used hemp oil or milk.) I would presume you could use it milled like the flax in this recipe, but it might not hold together as well leading to a more brittle muffin. Let me know know how it turns out.
